Calling vodka sauce lovers

I just discovered the greatest thing and don’t believe in gatekeeping–

Vodka sauce on lentils with crushed red pepper flakes absolutely slaps. Spicy, vodka sauce laden, and vegetable heavy. Fast, easy, cheap.

Is vodka sauce the healthiest? Absolutely not. But it’s delicious and I simply refuse to stop eating it. Swapping the pasta out for lentils, however, definitely makes it a lot healthier than usual.

To me, vodka sauce must be pink to be authentic. The orange stuff is bs. Here’s a good recipe:

1/4 cup unsalted butter 

2/3 cup vodka

1/2 teaspoon red pepper flakes, optional

28 oz. canned crushed tomatoes 

1 cup heavy cream

1/2 cup grated parmesan cheese

In a saucepan, melt the butter over medium heat.

Add the vodka and red pepper flakes , bring to a simmer and cook for a couple of minutes to cook out the alcohol.

Add the crushed tomatoes, bring to a simmer and cook for about five minutes, or until slightly thickened.

Stir in the cream and cook for another five minutes, then stir in the cheese.

Serve over lentils
