Hey y’all, my co-workers and I are going out of the office on Thursday and Friday for a field trip of sorts. Dinner on Friday is covered by the office, but we’re on our own for Friday’s meals. We can get reimbursed, but the area that we’re headed to is *very* rural and I’m skeptical that I will be able to find readily available vegetarian meals out there, so I plan on packing some things ahead of time to snack on throughout the day. Right now I’m thinking of packing some overnight oats to keep at the hotel Thursday night and eat for breakfast Friday morning. I also plan on oven-roasting a can of chickpeas then spicing them to snack on throughout the day on Friday. What other suggestions might y’all have? I also will probably pack some fresh fruit like an apple or an orange. I would also like some vegetable suggestions. Thanks y’all!
