My husband and I are both vegetarian and expecting our baby in a couple months. I want to prepare a bunch of freezer meals that I can defrost and bake or chuck straight in the microwave to reheat.
Some things I’ve thought of are soups, lentil cottage pie, vegetarian lasagne etc. Even small easy to grab things like mini frittatas. But baby brain is making it hard to come up with ideas that I can bulk make now to freeze for later!
Edit: I should note that I’m in the southern hemisphere, so it’ll be winter here when baby arrives. Thank you everyone for all your suggestions so far! It’s been very helpful
