I am a recent college graduate who got into meal prepping my dinners while in school. The weather is warming up rapidly where I am, and I want to prep some dinners but am struggling to think of ideas. Most of my meals I have prepped in the past are winter-y so I’m struggling to think of some that I can eat in warmer weather. I live in an old brownstone that doesn’t have AC, and I also walk everywhere, so preferably something on the “lighter” side as eating heavy foods can make me feel lethargic this time of year. I basically lived off prepackaged salads and sautéed chicken last summer, so I want to switch it up a bit.
I’m not a picky eater. The only food that I absolutely hate and refuse to eat are raw tomatoes. I’m also lactose intolerant. As far as appliances, I have a stove, oven, microwave, and crock pot. FWIW, as I literally just graduated from college on Friday, I have a limited budget and do the bulk of my grocery shopping at Trader Joe’s. Just looking for some inspiration thank you!
