I’m trying to add more veg to my diet and look after my body better, any advice or recipes?

As mentioned i’m starting to try and incorporate new vegetables and healthy foods into my diet as I’ve always avoided vegetables for taste and texture. I’ve always been a picky eater so it’s been a huge challenge for me to eat healthy and I really want to look after my body better.

I have a few questions to ask:
First off, i’ve tried banana pancakes and so far so good! Are they healthy? I’m not really sure what constitutes as healthy as my perception is always skewed.

Second of all, any vegetable recipes you may have that would be good for me to try i’d really appreciate! I’m not allergic to anything but i’d prefer to avoid mushy textures as much as possible.

Any other advice you may have in terms of getting a better balanced diet would be greatly appreciated! For reference, my diet is currently mostly protein and carbs, and lots of sugar snacks that i’m attempting to cut down on. Looking on the bright side i can only really go up from here :)
