I accidentally made a super simple and delicious salmon salad and ive been putting it on toast for breakfast for the last few days. It’s the perfect blend of fat, protein, and carbs to keep me full until lunch!
1-2 salmon filets from frozen , seasoned to taste, cooked about medium, and shredded
1tbs mayo or mayo substitute
Mix those up, salmon is naturally fatty so it doesnt take much mayo to get a kind of creamy consistency
I spread about a tablespoon on toast and then top with thinly sliced cucumber. It makes about 2 cups. If you dont like cucumber, i suggest adding some lemon zest to cut the fattiness.
I tried this first with some leftover salmon and its been my go to breakfast since!
